This simple and delicious recipe is from The Healthy Brain Cookbook (Alzheimer's -- The Science of Prevention 2019)

Sesame Garlic Chicken with Broccoli Pepper Slaw
Serves 2
For the Broccoli Pepper Slaw
In a bowl toss together:
3 cups shredded broccoli
1 cup diced sweet pepper
1 tablespoon olive oil
4 teaspoons grated ginger root
Salt and pepper, to taste
Leave raw or take the edge off by sautéing in a skillet for 5-7 minutes over medium-high heat. Transfer to a serving plate to keep warm.
For the Sesame Garlic Chicken
To a skillet (could be the same one used for the broccoli mix), add:
4 teaspoons sesame oil
8 ounces bite-sized raw chicken breast
Salt and pepper, to taste
Cook the chicken for about 4 minutes on each side. Then add:
2 cloves garlic, thinly sliced
Cook and stir for about another minute.
For the Assembly and Presentation
Spoon half of the broccoli pepper slaw on each plate and top with half the chicken.
